WELCOME TO TREV LOCKZ!
Hi! Welcome to the home of Trev Locks. I’m Trev, a plant based chef from south London of Caribbean heritage and a lover of Caribbean cuisine.
Just like every other chilli lover out there, I started making chilli sauce and jerk marinades just for fun and practice so that I would have my own unique recipe. Family and friends loved it, and the jerk eventually featured on the most popular dish at the restaurant I worked in, selling out almost every night!
The feedback was so overwhelming, I felt compelled to find a way to share my sauce with as many people as possible.
So here we are, I am Trev Lockz. This is my sauce!

The Original Trev Lockz. Dip it, spread it, cook it. The perfec balance between hot spice and Caribbean flavours. Loaded with superfood Spirulina famous for its high protein, mineral and nutritional content. 

A mild Bajan inspired pepper sauce, based around superfood Turmeric, mustard and other special spice and flavour combos. Slap this one on (almost) anything!

Devilishly hot presenting a real homage to a classic. Spice and heat perfectly balanced between sweet, salty and umami. Very nice.

Our series is a sensory journey, inviting diners to explore what happens when two distinct food cultures collide in the most delicious way possible.
Invented by Chef Trev Lockz, a master of flavours and innovation, each event is a carefully crafted experience designed to surprise, delight, and challenge expectations.
Our inaugural event, Jam Italian, launches in London in April 2025 sees Chef Trev joining forces with Valentine Dines, a visionary culinary curator. Seamlessly blending the vibrancy of Jamaican spices with the comforting elegance of Italian cuisine. Imagine jerk-infused pasta, a guava cannoli, or a seafood risotto kissed with the smokiness of pimento.
Next, Chef Trev takes the exploration to an even more exotic setting—the Maldives, where Jamaican and Asian influences will intertwine in a feast that balances heat, umami, and tropical freshness.
Each evening at What If is more than just a meal—it’s an experience. Expect intimate settings, curated menus, storytelling through food, and a celebration of culture, music, and community.
